Matcha products are derived from the powder of Tencha leaves. Tea farmers grow Tencha leaves through a process called shading cultivation. Tencha and Gyokuro go under this cultivation process to preserve the amino acids and caffeine in the leaves. Further, this shading cultivation process increases chlorophyll, giving you a bright dark green color. In addition, it prevents the theanine from converting to catechin. Like Gyokuro, it has a rich in umami, sweet, and less bitter, astringent taste. Matcha products are used in various sweets and cooking.
